Spinach and Cheese Wrap

 This one is so stomach filling and it's loaded with all the goodness of paneer, palak and cheese... This is best had as an evening snack...


Ingredients:

Paneer - 1 cup

Spinach - 2 cups

Brocolli - 1 cup

Cheese - 2 slices

Wheat flour - 1 cup

Salt to taste

Oil - 1 tsp

Chilli flakes - 1 tsp

Chilli powder - 1/2 tsp

Oregano - 1/2 tsp

Method:

Boil brocolli florets in water for 5 mins.

Chop paneer into small pieces.

Blanch spinach in hot water for five minutes and then squeeze out the excess water from it.

Meanwhile mix wheat flour with water and form dough.

Now heat a pan and add oil. Roast the broccoli for two minutes. Add salt, oregano and chilli powder and keep aside.

Remove it from flame. Now in the same pan add paneer cubes and spinach and roast for a minute. Add oregano, chilli flakes, salt and mix. 

Now roll the dough flat. Semi roast it on medium flame. Now make a cut from the centre to one end.

Place all the ingredients as shown in the picture.

Fold it into wrap and again roast on low flame till the wrap is crisp on outside...

Enjoy as an evening snack..

Paneer and Chickpeas Salad

 High protein and low carb salad that you can enjoy guilt free...

Ingredients:

Paneer - 100gms

Chickpeas- 50 gms

Onion - 30 gms

Sweetcorn - 10gms (optional)

Carrot - 20gms

Brocolli - 40 gms

Italian seasoning - 1/2 tsp

Chat masala - 1/4 tsp

Chilli powder- 1 tsp

Salt to taste

Oil - 5 gms

Method:

Soak chickpeas overnight and pressure cook them for four whistles.

Boil sweetcorn and broccoli florets for 5 mins and keep aside.

Grate carrot and chop onions.

Heat oil in a pan. Roast paneer and keep aside.

Now in the same pan slightly roast brocolli, sweetcorn, onion and chick peas for two minutes.

Combine everything in a bowl. Add grated carrot to it. Add Italian seasoning, chat masala, chilli powder and salt and mix well.

Enjoy low carb high protein salad.

Papaya Halva

 Quick sweet dish that can be made in few minutes and unique in taste...

Ingredients:

Papaya (peeled and chopped) - 1 bowl

Sugar - 2 tbsp

Ghee - 2 tsp

Cashewnuts - 5 to 6

Almonds - 4 

Pistachio - 5 to 6

Cardamom powder - 1/4 tsp

Method:

Grind the papaya into a smooth paste.

Heat one tsp ghee in a pan and roast the dry fruits and keep aside.

Now add the papaya puree into the same pan and cook on medium heat till it starts to thicken.

Now add sugar and cardamom powder and mix well. Adjust the quantity of sugar depending on the sweetness of papaya.

Continue cooking till the everything comes together and thickens. The papaya turns more reddish on cooking. Add one more tsp of ghee and mix well.

Once it starts to leave pan, switch off the flame. Garnish with nuts and serve..

Hariyali Sabzi Paneer

       Make your weekends interesting by including this in your evening snacks.. It tastes awesome and you can have a healthy delicious snack...

Ingredients:

Paneer - 100 gms

Potato - 2 small size

Sweet potato - 1 cup (sliced)

Cauliflower- 1 cup florets

Brocolli - 1 cup florets

Baby corn - 3 chopped

Onion - 1 medium chopped

Garlic pods - 4 to 5

Ginger - 1 " piece

Mint chutney - 1 tbsp

Spinach - 1 cup

Curd - 1/2 cup

Gram flour - 1 tbsp

Dry mango powder - 1 tsp

Garam masala - 1 tsp

Oil - for roasting

Salt to taste

Method:

Boil sweet potato, potato and baby corn and keep aside.

Similarly boil cauliflower and broccoli for 5 mins and keep aside.

Blanch the spinach and make puree.

Take a large bowl. Add all the vegetables, paneer, spinach Puree, curd, gram flour, dry mango powder, garam masala and salt and mix well..

Make ginger garlic paste and add. Also add regular mint chutney to the mix. 

Marinate for 15 minutes and roast them on pan with little oil till they are golden.

Serve hot with tomato ketchup.
